Tofu Fried Rice Ingredients: • 4 cups cooked rice, slightly cooled. • 4 1/2 Tbsp. oil • 2 cloves of garlic, crushed. • 2 cloves of garlic, minced. • 3/4 lb. tofu, diced. • 2 Tbsp. soy sauce. • 1 1/2 cups onion, diced. • 1 cup celery, diced. • 1/2 Tsp. salt. • 1 1/2 cups fresh bean sprouts (optional). Directions: • Heat 2 tbsp. oil and 2 crushed garlic cloves in a heavy skillet or wok. • Cook until garlic is light brown, then remove and discard the garlic. • Add 3/4 lb. diced tofu and stir-fry for 1 minute. • Add 1 tbsp. soy sauce and continue to stir-fry. • Remove tofu from pan. • Add 2 tbsp. oil and 2 minced cloves of garlic. • Let fry for 1 minute, then add 1 1/2 cups diced onion and 1 cup diced celery. • Stir-fry for 2-3 minutes, then add the cooked rice, 1/2 tbsp. oil, and 1/2 tsp. salt. • Continue to stir-fry until everything has some oil on it. • Add diced and fried tofu, 1 1/2 cups fresh bean sprouts. • Stir-fry 2 more minutes then add 1 tbsp. soy sauce. • Mix well, serve hot.
