Tofu & Broccoli in Garlic Sauce Ingredients: • 1 ½ lbs. Tofu • 1/4 cup soy sauce • 2 medium onions • 1 bud garlic (crushed, 8-10 cloves) • 1 lb. broccoli • 2 cups boiling water • 2 cubes vegetable bouillon • 1 1/4 cup oil • 1 Tsp. crushed red pepper • 1/4 Tsp. ginger • 3 Tbsp. honey (or rice syrup) Directions: • Cut tofu into cubes and marinade in soy sauce. • Carefully stir the marinading tofu occasionally while preparing the following steps. • Cut onions in half lengthwise, then into thin, half-rings and set aside. • Cut broccoli into large flowerettes and set aside. • Dissolve together 2 cups boiling water and vegetable bouillon and set aside. • Drain the tofu and reserve the liquid. Brown tofu in a heavy skillet or wok on all sides in ½ cup oil. • Remove tofu when brown. • Add 1 Tbsp. oil to pan. • Quickly fry onions until soft. • Add and stir together crushed garlic, red pepper, ginger, honey (or rice syrup). • Add tofu and reserved marinade. • Simmer over medium heat for 1 minute, then add cut broccoli. • Simmer for 3 more minutes. Turn off and set aside for 5 minutes. • Serve over rice.
