Basic Couscous Makes 2 1/2 cups. Ingredients: 1 cup boiling vegetable stock 1 tablespoon soy margarine 1 cup couscous In a medium sauce pan, bring stock and margarine to a boil over high heat. Put dry couscous in another pot. Pour hot stock over couscous. Stir once, cover with a tight-fitting lid and remove from heat. Let stand 10 minutes, until all liquid is abosorbed. Fluff with a fork and serve immediately.
