Basic Marinated Tofu Ingredients: 2 pounds firm tofu, drained, pressed and sliced crosswise into 4 slabs. 1 cup hot water 2 minched garlic cloves 2 teaspoons fresh ginger, peeled and finely minced 1/2 rice wine vinegar 1/ cup sesame oil 1/4 cup tamari soy sauce 2 tablespoons fresh lime juice ash of cayenne pepper 2 tablespoons minced scallions 2 tablespoons fresh cilantro, minced 1. Prepare tofu and set aside. 2. In a medum bowl, combine garlic, ginger, rice wine vinegar, sesame oil, soy sauce, lime juice, cayenne pepper, scallions, and cilantro. Mix well with a fork. Pour over tofu. Cover and store in the refrigerator. Marinate anywhere from 1 hour to 2 days. Turn occasionally. 3. Preheat oven to 375 degrees. Remove tofu from marinade (but save the liquid!!), arrange on a greased baking sheet and bake about 30 minutes, turning once. Pour marinade into a small saucepan and simmer until hot. Serve on the side with baked tofu.
